I fell in love with the beef stew at a local place called King Kong. After many attempts, I've come up with this recipe, and I think it's as good or better!

Serves: 8 servings
Ingredients
  • 2½ pounds cut up gold potatoes
  • 1 kg (about 2 pounds) beef chuck, cut into ½ inch pieces trimmed of the fat
  • 1 15 ounce can north beans, rinsed and drained well
  • 1 medium onion, diced
  • 1 6 ounce can tomato paste
  • approx 3 liters (quarts) water, or more, see recipe
  • 1 tablespoon Ghee (see note)
  • ½ teaspoon salt, as needed, optional
  • 4.00 cup drained, Green Beans, Fresh Cut Rinsed and Drained
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 1 teaspoon black pepper, or to taste
Instructions
  1. Prepare all your ingredients ahead of time. Finally dice your onions, cut your potatoes into ½ inch cubes and soak in water til using (this helps prevent oxidization), cut your beef into ½ inch pieces, rinse your beans well, drain your green beans, and mix your tomato paste with all your seasonings. This helps prevent clumps of seasoning in your stew.
  2. With your pot over medium-high, saute your onions til it softens and just starts to brown, this should take about 3-5 minutes. Then add your beef and stir it around. If you want you can brown your beef, but it isn't required. Add enough water to cover your beef by a few centimeters, or about an inch. Add salt now if desired.
  3. Cover, reduce the heat, and boil until the meat is tender. Anywhere between 30-60 minutes. Check on it every so often and add a bit more water if needed so it doesn't boil dry. After meat is tender add your potatoes and enough water to color by a few centimeters or an inch. Boil the potatoes until fork tender, about 15-20 minutes.
  4. At this point add the rest of your ingredients, making sure to dissolve all the tomato paste and seasoning. If you want to, boil your soup down more until it thickens like mine. Adjust the salt and pepper and you're done! This soup only gets better in the fridge the next day and is excellent over toast, cornbread, or plain ole rice. Delicious and a sure fire recipe!
Notes
Any type of onion or any type of potato can be used, I just prefer sweet onions and yukon gold potatoes.
If you don't have ghee you can use olive oil or use ½ tablespoon oil and ½ tablespoon butter for the same rich taste

I got this craving for a brownie so I went to the kitchen and threw stuff together and it worked! That is literally how this came to be.

Serves: 6 pieces
Ingredients
  • ½ cup Coconut Flour
  • ¼ cup Tapioca Starch
  • ¼ cup Toasted Carob Powder (or ¼ cup cocoa powder)
  • ½ tsp, Baking soda
  • 1 tsp Baking Powder Aluminum Free & Double Acting
  • 3 eggs
  • ¼ cup plus 2 tablespoons Coconut Milk
  • ¼ cup Honey
  • 1 tsp Pure Vanilla Extract
  • 2 tsp apple cider vinegar
  • 2 tablespoons Coconut Oil
Instructions
  1. Preheat your oven to 350f (175c).
  2. In a large bowl mix together your eggs and honey until well combined. Then add your apple cider vinegar, vanilla, coconut milk, and coconut oil. Don't worry if your coconut oil forms little solid pieces, this is actually what you want because when the brownie bakes it makes these yummy little pockets. Make sure you whisk this together very well, you don't want the oil chunks very large.
  3. In another bowl, mix the rest of your ingredients together well. You don't want any lumps.
  4. Grease your baking container well; I used a glass loaf pan. Don't use a large pan if you want these to be taller. Once your oven is well preheated, mix your dry ingredients into your wet ingredients and whisk til there are no lumps. Scrape your batter into your container and even it out.
  5. Bake in the middle of your oven for 25-35 minutes (see notes). I like my brownies well done so I went the full 35 minutes. A toothpick inserted into the middle will come out clean. Let cool in the pan for at east 10 minutes. Serve warm, and try some butter on top, it tastes amazing!
Notes
If you want more fudgy/gooey brownies only bake it about 80% done, about 25 minutes. A toothpick will come out almost clean and might be a little jiggly in the middle. Let cool at least 20 minutes.

I’ve been considering off and on to purchase from vitacost.com for awhile now. After doing some price comparing at Whole Foods I decided it was worth it, but I needed to wait until I was able to order at least $49 to get the free shipping.

In terms of my experience with Vitacost I will say I ordered on April 28th, and received my package the morning of May 4th. It’s slower than if I was to order at say Amazon or the like, but next time I’ll make sure to order things (IE TOOTHPASTE) before I actually need it, I was having to really stretch the toothpaste out for days, haha! Anyways when I received the package I noted that all my items were secure in packaging as you see in the video. They were careful to package things in zip baggies and the glass bottles were wrapped in paper and this cool thin cardboard stuff. Having ordered off Amazon before and receiving broken glass bottles, I really appreciated this!

Definitely worth it, plus I didn’t have to go to the store, it was shipped to my house for free. Big plus when you don’t have a car and have to carry it all on the bus! Very Berry Paleo Vegan Ice Cream

This ice cream recipe is very versitile and yummy! It's Dairy Free, Vegan, Paleo / Primal friend AND is no sugar added.

Serves: 1 serving
Ingredients
  • ⅓ cup coconut cream or ½ cup coconut milk
  • ⅔ cup water (or ½ cup water if using coconut milk)
  • 100g banana, frozen
  • 40g blueberries, frozen
  • 20g raspberries, frozen
  • 90g strawberries, frozen
  • ½ teaspoon vanilla extract
Equipment
  • A high speed blender like a Vitamix OR a decent food processor
Instructions
  1. Add your coconut cream (or milk) to your blender, add enough water to equal 1 cup of liquid. Add in the rest of your ingredients.
  2. Blend on medium speed using plunger if needed (or scrap the sides down if your blender doesn't use a plunger). If using a food processor, pulse several times, scraping down the sides as needed. Blend until creamy and smooth.
  3. Serve immediately or you can stick this in the freeze for 30 minutes to firm up more if desired.
Notes
I use Aroy-D brand coconut cream, if your brand is more solid, you might need to water it down more.

Don't want ice cream? That's okay, use fresh fruit or let the frozen fruit thaw and you'll have yourself an amazing tasting smoothie! Yummy!

Not sweet enough? Add a bit of stevia to sweeten it up.

Ingredients: Green Tea, Natural Tropical Flavors, Natural Flavors, Marigold Petals, Pineapple Bits

I don’t drink tea, can’t stand the stuff, but this stuff smelled amazing when I brewed it up for my husband. They come in these mesh bags and are REAL tea leaves, like you might get from a specialty tea shop. My husband said it tasted really good and would give it a 4/5.

Sour candies or gummies are not something I would normally purchased so this was new for me. I noticed first just how much sugar was in these things, insanely high and boy you can taste it. I also don’t understand why they call them “sour” beans, they aren’t sour at all! Everyone who tried these things agreed. In terms of taste, I wasn’t really a fan. The dark reddish ones weren’t terrible but the rest were just gross. 2/5.

Ingredients: Cashews, Almonds, Gluten Free Oats, Pecans, Brown Rice, Brown Rice Syrup, Evaporated Cane Juice, Organic Honey, Walnuts, Tapioca, Maltodextrin, Expeller Pressed Canola Oil, Sea Salt, Natural Flavors, Corn Starch, Rice Bran Extract, Caramel Color.

These little things were interesting! Not too much sweetness and a yummy crunch. If you like granola you’d probably like these. I should have put them on yogurt or ice cream, but straight out the bag they were just as yummy! Some of the ingredients aren’t things I’d normally eat, but even still I give it a 4/5.

I’m not a fan of popcorn, you guys know that but this doesn’t taste like popcorn. They are airy and crispy and just all around yummy. They aren’t high in salt or sugar (in my opinion) and they have a great flavor. I enjoyed them so much I used my points in the Love with Food store and got a free box of 40 little bags! My ONLY concern is it’s unclear if they are made with GMO free corn. I’m giving them 5/5 based on taste but after my free bags are gone I won’t be buying anymore. (If I had realized that before hand I wouldn’t have gotten them).

With how good the kettle flavor was you’d think these would be better, however they’re not. Firstly, I HATE that it has yeast extract in it (another form of MSG), that being said the extract didn’t work. These had a strange after taste and were not yummy at all. Again, I also have gmo concerns. 2/5 – if you really wanna try these chips, I suggest the kettle corn flavor.

Surprisingly this is AMAZING! I’m not one for almond butter and I greatly dislike goji berries and hemp seeds, HOWEVER, it works in this. I’ve put it on ice cream, mixed with honey, put it on yogurt. It’s really good. My husband thinks it’s gross though, and I’ll admit it took a couple bites before I really got into it. Now I’m boarderline addicted and even ordered 4 more. 5/5

Geeze lots of ingreidents haha! (Yes I totally copied that from the luna bar website!). I told you in the video I hate these and I do, if I was to personally review these I’d give them a -5/5 they are so gross, they smell and taste like pine sol. I don’t understand how anyone could eat them. That being said, I enjoy the other Luna flavors so I’ll let my husband rate this one. He enjoyed these bars, but agreed the lemon was just WAY too strong. 3/5 from the hubs.

I was excited to see these in my box. I have seen those hummus things in the local stores and always wondered what they tasted like. I am sad to report they’re horrible. The hummus is WAY too lemony and liquid. It has no thickness to it what so ever. The chip tasted stale and had no flavor. I saw some people review them as salty but honestly I didn’t get that at all. We threw the chips out and my husband ate one of the hummus. The second one is still in my fridge and hopefully he’ll eat it one day. 1/5

With a name like “The Best gluten-free chocolate chip cookies in the world” I think you’re setting yourself up to either be amazing or a let down. These are not the best gf cookies I’ve ever had, but they’re not terrible. The sweetness is very balanced and I WISH these were soft cookies, they are instead crispy. I give them a 4/5.

Pure Organic Coconut Water by Coco Libre
Ingredients: 100% organic coconut water from concentrate, natural flavors

I’m really confused why this company makes their product from concentrate. I would think that’s less cost effective and it’s not helping you honestly. This had an artificial nasty taste and I couldn’t drink this. I am an addict of coconut water, I’ve tried probably 50 different brands, this was the first I couldn’t drink. & natural flavors? Really… 1/5 here guys.
